Fresh green cooking  新緑の料理教室

November, it's a comfortable season of the early summer... I'm apt to think so.
Actually, strong wind, rain, thunderstorm, unstable weather follows everyday.
The outside weather hasn't been good enough, however, beautiful cuisine being aware of the fresh green have been cooked at the cooking classes.

11月は新緑の季節! 
ですが、不安定な天候が続く毎日。 
ガーデンに植えた野菜やハーブの苗が、強風やら雷雨にあおられて悲鳴をあげてる! 
早く風除けをつけてあげないと・・・。 
毎年、本格的な夏が来る前は、このように落ち着かない天候が続きます。

今月の料理教室は昨日が最終日。 外の天気はイマイチでしたが、新緑を意識した
グリーンな料理が美しく仕上がりました。


COOKING CLASSES ~ NOVEMBER MENU ~

Wakakusa-G-2  若草焼き: 白身魚のグリル、若草味噌で
  香ばしくコクのある仕上がりにします。 
  味噌と卵黄、ここに『若草』として春の青物を
  加えます。 今回はにんじんの葉を刻んで使用。  これから夏にかけて収穫されるにんじん、
  根の部分が小さいほうが葉は柔らかいので、
  時期的にもちょうどいいんです。 
  そして栄養価は・・・根よりずっと高い! 
  使わない手はないですよね。 
           (捨てるのはもったいない!)

Wakakusa-yaki of white fish:
"Wakakusa" means fresh green. We added chopped leaves of carrot into the sauce of egg yolk and miso. Amazing nutritive value in the leaves !
Great source of β-carotene, Vitamin E, Vitamin B1, Vitamin B2, Vitamin A, Vitamin C, and Calcium.
It's a shame that we feed only rabbits it.
We devised it to cook deliciously.

Ohitashi & the variation:  おひたし4種:
Ohitashi is a great way to eat spring and summer vegetables. This simple cooking is versatile, and the Ohitashi sauce makes vegetables delicious magically. We used leaves of carrot for this Ohitashi too, with chicken tenderloin. The pleasant bitterness with UMAMI reminded me of "Seri"(edible wild plant in Japan).

(定番をおしゃれに盛付け)       (一晩おくと味がしみてさらに美味)

CARROT LEAVES &
  CHICKEN TENDERLOIN :
    ASPARAGUS & CARROT :

にんじん葉とささみのおひたし:    アスパラとにんじんのおひたし:
(セリのような風味、一押し!)    (グリル野菜のおひたし、これも美味しいです)

基本の割合を覚えたら、あとは応用自在。 春野菜・夏野菜に是非ご活用を。 
ここでも、にんじんの葉を使いました。 にんじん(根の部分)同様、油との相性が良く、
かき揚げにすると最高に美味しいですが、おひたしにもイケます。 さっとゆでて刻んで、酒蒸しの鶏ささみと合わせて、おひたしに。 食べるときにレモン汁で味を引き締めます。(レモンの代わりに梅肉のせてもイケます!) 旨みのある苦味が、まるでセリのようで、日本人の私にとっては懐かしい味。 皆さんにも好評で、「セロリやパセリの葉も同じように使えるかもしれない」との声が。 また、にんじんの葉の栄養についてお伝えしたら、「加熱後、野菜ジュースに混ぜてもいいかも」と話題が次々展開。

 A variation of Italian dessert "Tiramisu".
 Bitterness of Matcha and sweet cheese cream
 makes beautiful fusion taste.

抹茶ティラミス: お馴染みのデザートを、抹茶を使って和の雰囲気で。 
小さなグラスに作ってもいいし、パーティーには大きなガラス製ボウルでも。 
チーズ風味の甘さと抹茶のほろ苦さ、美味しいフュージョン・デザートです。
